The highlight of the day is the preparation and sharing of an authentic Pachamanca ceremony. “Pachamanca” comes from the Quechua words meaning “earth oven.” It is one of the most ancient culinary traditions of the Andean world and represents far more than a meal — it is a ritual of gratitude to Pachamama (Mother Earth).
The dish is cooked underground using heated stones that slowly roast marinated meats, native tubers and Andean herbs. Guests actively participate in the process — from placing the ingredients into the natural earth oven to the ceremonial unveiling of the Pachamanca before sharing the meal together.
